DIY Coffee Syrup (Step-By-Step)

I started making coffee syrups at home when I wanted a natural, preservative-free option—and let's be real, store-bought syrups can get pricey. So here's a step-by-step guide to whip up your own coffee syrup right in your kitchen:

Equipment

  • 1 cup of brewed strong coffee (for a deep, rich flavor)
  • 1 cup of sugar (use white sugar for a classic taste or brown sugar for a caramel note)
  • Optional: 1 tsp vanilla extract, cinnamon sticks, or any other flavorings you like.

Instructions

  • Brew Strong Coffee: Start by brewing a cup of strong coffee. Use more coffee grounds than usual so the flavor stands out. I usually go for about 2 tablespoons of coffee grounds per cup of water. Make sure the coffee is hot when you add it to the sugar.
  • Combine Coffee and Sugar: In a small saucepan, mix your hot coffee and sugar together. Set the heat to medium and stir constantly until the sugar fully dissolves. This should take about 3-4 minutes. Be patient, because this step is key to getting that smooth, syrupy texture.
  • Simmer and Thicken: Once the sugar is dissolved, reduce the heat to low and let the mixture simmer for about 10-15 minutes. You'll want to stir occasionally to keep it from sticking to the bottom.
The goal is to let the syrup thicken slightly—watch for it to coat the back of a spoon. If you're adding extra flavors, like a cinnamon stick or vanilla extract, this is the time to throw them in!
  • Cool and Store: Remove the syrup from heat and let it cool completely. If you've added any whole spices (like cinnamon or nutmeg), strain them out. Pour the cooled syrup into a clean, airtight bottle or jar.
I recommend using a glass bottle with a pour spout for easy use. Store it in the refrigerator, where it'll last up to 2 weeks.
  • Enjoy in Your Coffee: Now that you've got your homemade coffee syrup, add it to your hot or iced coffee, lattes, or even drizzled over desserts. Start with a teaspoon and adjust according to taste. You can even mix and match different flavorings—try adding a splash of hazelnut extract or some cocoa powder for a mocha twist.
